5 lb bag red potatoes - diced and cooked
1/3 cup salad oil
2 tbsp cider vinegar
1 1/2 tsp salt
1/8 tsp pepper
8-10 hard boiled eggs
Celery - chopped
Onion - chopped (red or white)
Real mayonnaise (a lot!)
Paprika

Directions:
Mix hot, cooked potatoes together with oil, vinegar, salt and pepper. Let sit for minimum of 30 minutes up to over night. Then mix in eggs, celery and onion. Then add mayonnaise - as much as you need, don't skimp! Finish with one sliced egg and sprinkled paprika on top.
