Jerk Seasoning:
3 T chopped onions flakes
2 T ground dried thyme
2 T salt
3 teaspoons salt
3 teaspoons ground nutmeg
3 teaspoons fresh ground black pepper

Chicken
3 boneless skinless chicken breasts halved
1 1/2 T butter or margarine
1 1/2 T oil

Directions:
Directions:
To make the seasoning, combine all ingredients. (Can double or quadruple the mixture to keep it on hand).
To make chicken, remove all fat from the chicken breasts. With a skewer or large fork, poke several holes in the breasts. Spoon the jerk seasoning over both sides of the chicken and leave to marinate for 20 minutes.
Then in a skillet over medium-high heat, heat the butter and oil. Add the chicken and cook 5 to 10 minutes on each side or until opaque throughout. Slice before serving.
