2 lbs ground sirloin
1 1/3 can evaporated milk
1 cup flour
1/8 lb butter
4 oz of cream cheese
1 can of cream of chicken soup
2 egg yolks
1 tsp lime juice
1 tsp salt
1 onion (minced)
Nutmeg (optional)

For Breading:
4 eggs
Cracker meal

Directions:
Directions:
Brown ground beef flattening as you go. You may season meat with some salt and garlic to taste. Add flour and mix well. Add the cream of chicken soup, butter, cream cheese, salt and pepper, onion, egg yolks, evaporated milk, and the lime juice. If you like nutmeg you can add it now approximately 1/4 of a teaspoon. (The quantity was never made clear so it will be up to your taste). Mixture should be thick and creamy. When all ingredients are mixed well remove from fire and place in a large rectangular pyrex. Cover with wax paper and cool in the refrigerator.
When cooled through, slice the the filling into equal parts (8 pieces x 10 pieces).
Roll out pieces into small tube shapes (croquetas). Dip each piece in the eggs and bread with the cracker meal.

To fry make sure oil is very hot before dropping in the croqueta. Fry to golden brown. Now Enjoy!
