3 c. V-8 juice
1/4 c. lemon juice
2 cloves garlic, peeled
2 cans, diced tomatoes
2 carrots, peeled and cut into chunks
1 small onion, cut into chunks
1 cucumber, peeled and chopped
3 stalks celery, chopped
1 green pepper, seeded and quartered
1/4 c. fresh parsley
1/4 c. fresh basil
1/4 c. olive oil
Cholula hot sauce, to taste
1 tsp salt or to taste
1 tsp pepper or to taste

(Made in a food processor in three stages.)
Set aside the V-8 juice. Chop and mix remaining ingredients and divide into three portions. Mix each portion with 1 cup of the V-8 juice and run through a food processor, combining the processed mixture in a large bowl as it is completed. Mix well and refrigerate for at least 4 hours before serving (over-night is better). Garnish with chopped cucumbers, slivered basil, or a drizzle of olive oil.
