2 tbsp olive oil
1 large onion, minced
2 cloves garlic, crushed
1 tsp ground cayenne pepper
2 red bell peppers, seeded and minced
1-1/2 c. carrots, minced
1-1/2 c. potatoes, chopped into small pieces
3 stalks celery, sliced and chopped
3-3/4 c. vegetable or chicken stock
6 tbsp crunchy peanut butter
2/3 c. corn
1/2 roast chicken, cut into pieces
salt to taste
unsalted, roasted peanuts (garnish)

Combine all ingredients and simmer slowly for an hour or more until vegetables are cooked. Garnish with peanuts and serve.
