4 large sweet potatoes
1 Tbsp brown sugar (Marta uses 1 teaspoon low sugar maple syrup-just for taste)
¼ cup orange juice (more or less depending on how creamy you want the potatoes)
1 Tbsp butter
12 or more marshmallows

Boil sweet potatoes until tender and peel skin. In a large bowl combine/beat sweet potatoes and rest of ingredients up to marshmallows. Pour mixture into a baking dish and place marshmallows on top. Bake in 350 degree oven until marshmallows are golden brown.
