75 grams buerre (1/3 cup)
plus 1 tsp buerre
4 Tbsp farine
1/4 L. de lait (1 generous cup)
1 boite de bisque de homard
5 oeufs (separated)
1/4 tsp de sel dans les blanc d'oeufs
poivre

Preheat oven to 425 degrees.

Put 1 Tbsp butter in souffle dish and grease the sides. Put rest of butter in a pan on the stove and add flour. Stir until combined. Add cold milk. Cook until thick-Add five yolks–beat. Add soup and beat until combined. Add salt to egg whites and beat-gently, fold the egg whites into the lobster mixture. Pour into a pregreased souffle dish and cook at 425 degrees for 15 minutes. Raise the temperature to 450 degrees and cook another 20 minutes.
If lobster is to be added, add more fluid to compensate.
