2 tender frying chickens
¼ cup cooking oil or butter or combination
2 medium onions-chopped
1 carrot-chopped
1 Tbsp curry or to taste
2 Tbsp flour
2 cups chicken broth-either canned or from simmered chickens
1 small can coconut milk (optional)

Put 2 chickens in large pot. Cover with water. Add bay leaf, carrot, and 1 chopped onion. Simmer until tender-about 1 hour. Remove from pot to cool-reserve liquid-remove meat from chicken and set aside.

In a heavy saucepan, add cooking oils or butter. Add 1 medium onion chopped. Cook until onion is translucent (a few minutes). Add 1 Tbsp curry, stir. Add 2 Tbsp flour-stir. Add 2 cups of chicken broth (if using fresh broth from cooked chicken, boil down until you have 2 cups). Cook until thickened. Add coconut milk.

Serve over rice with the following condiments:
Chopped peanuts
Grated coconut
White raisins
Pineapple chunks
Fried Bananas (sauté bananas in butter until warmed through)
