3 Red bell peppers, cut in half & seeded
2 Garlic Cloves, minced
1/8 c. Fresh Basil
3 tbsp. Olive oil
Salt & Pepper (to taste)
1/2 lb. Fresh Fettuccine
1 lb. Fresh Asparagus, ends trimmed & stalks cut into 1''-2'' pieces
1 c. Frozen Peas
1/2 c. Parmesan
1/2 c. Fresh Parsley
1/2 c. Sliced Mushrooms
36 Medium Shrimp (22-25 count) grilled shrimp or broiled chicken

Directions:
Place red peppers on baking sheet & broil turning peppers until all sides are blackened, about 15 mins. Cool & remove skins & pat dry. Cut into thin strips.
Combine garlic, basil, olive oil, salt & pepper. Marinate red pepper strips in this mixture about 10 mins.
Meanwhile cook pasta, asparagus & frozen peas in boiling water according to package directions. Vegetables should be tender, yet crunchy, drain pasta & veggies. Toss with peppers & marinade. Blend in Parmesan, parsley & mushrooms. Top with shrimp.
Serve hot or cold
