Double Fudge Chocolate Cake Mix
1 c. Milk
3 tbsp. Cornstarch
1 c. Margarine
1/2 c. Shortening
1/4 tsp. Salt
1 c. Sugar
2 tsp. Vanilla (or peppermint flavoring)
1 Egg- optional
Red (or Green) Food Coloring
2 1/2 tbsp. Hot Water
2 pkgs. Pre-melted Unsweetened Chocolate (or 2 squares of unsweetened chocolate)
3 c. Powdered Sugar

Directions:

Prepare cake mix according to package instructions, then pour into a greased and floured jelly roll pan (or large cookie sheet). Bake for 13-15 minutes, or less. Let cool completely.

Prepare the second layer by combining milk and cornstarch in a saucepan, cooking until thick. Stir constantly, preferably with a whisk to keep smooth. Take off heat and cool completely.

Meanwhile, mix 1/2 c. margarine, shortening, salt, sugar, 1 tsp. vanilla (or peppermint flavoring), and food coloring. Beat until smooth, then add milk/cornstarch mixture. Beat until creamy. Spread on cooled cake.

Prepare the third layer by combining 1/2 C. melted margarine, egg (if using), 1 tsp. vanilla, hot water, pre-melted unsweetened chocolate (equivalent of 2 squares of unsweetened chocolate melted with the 1/2 C. margarine). Add powdered sugar. Mix until smooth and spread on cake. It may be a little runny. Refrigerate, if needed to keep frosting cold. Tastes best at room temperature.
