8 pounded thin/chicken or veal cutlets
6 cloves garlic minced
1/2 cup parley chopped
8 slices prosciutto
8 slices fresh mozzarella
1.5 cups sliced baby bella mushrooms
1/2 cup flour
2 tbsp butter
1/2 cup olive oil for frying
1 cup chicken stock
1 cup marsala wine (or any wine)
toothpicks or cooking string

Start with your frying pan and heat your olive oil....
Lay out your cutlets and on one side of the cutlet, prepare as followed..
Season with salt and pepper
Rub on fresh chopped garlic and parsley
Layer your prosciutto
Layer your mozzarella
Roll up your cutlet and pin with toothpick or tie with string.
flour lightly.
Add fresh garlic clove and butter to olive oil (do not burn butter)
Place chicken/veal in pan and fry until golden brown
Optional - Add your mushrooms while meat is cooking
Add your chicken stock until heated
Add your wine until bubbly
Sauce should thicken up and is ready for serving
May add fresh parsley to top off dish!
