2 - 8 oz. pkg. cream cheese
1 - 8 oz. can crushed pineapple – lightly drained
1/8 to 1/4 cup finely chopped onion
1/8 to 1/4 cup finely chopped green pepper
1 cup grated cheddar cheese
12 oz. or 1 1/2 cups of sliced almonds

Soften cream cheese at room temperature and combine with next four ingredients. Mix with mixer on low or medium until evenly mixed. Next, mold into a ball by placing mixture in the center of a large piece of plastic wrap pulling sides to the top and shaping mixture into a ball. Make one large ball or two small balls. Chill 2 hours. Remove plastic wrap, use wax paper, spread some almonds on wax paper, place ball on top of almonds and cover ball by patting or rolling on sliced almonds. Serve with your favorite crackers.
