1 c. White Wine Vinegar
1 c. Red Wine Vinegar
1/2 c. Raspberries
1/2 c. Olive Oil
1/2 c. Vegetable Oil
1/2 c. Maple Syrup
2 Tbls. Dijon Mustard
2 Tbls. Tarragon (4 tbls. Fresh)
Dash of Salt
1 Head Bibb Lettuce, Washed and Dried
1/2 Head Red Leaf Lettuce, Washed & Dried
1/4 c. Blue Cheese, Crumbled
12 Rings Red Onion, Sliced

Directions:
Directions:
Prepare raspberry vinegar; combine red and white vinegar's and raspberries; cover and let sit 48 hours. Strain the vinegar and store at room temp. To make raspberry maple dressing, whisk together in a bowl 1/2 cup of raspberry vinegar, the oils, syrup, mustard, tarragon and salt. Build salad.
