1 1/2 c. Sugar
1 1/2 c. (about 12) Egg Whites, room temperature
1 1/2 tsp. Cream of Tartar
1/4 tsp. Salt
1 1/2 tsp. Vanilla
1/2 tsp. Almond Extract

Directions:
Heat oven to 375 degrees.

In small bowl, combine flour with 3/4 cup sugar. In large bowl, beat egg whites with cream of tartar, salt, vanilla, and almond extract until mixture forms soft peaks. Add 3/4 cup sugar, 2 tablespoons at a time, beating at highest speed until stiff peaks form. Spoon flour-sugar mixture 1/4 cup at a time over egg white mixture; fold in very gently just until blended. Pour batter into ungreased angel food cake pan. With knife, gently cut through batter to remove large air bubbles.

Bake at 375 on lowest oven rack for 30-40 mins or until crust is golden brown and cracks are very dry. Immediately invert pan onto funnel or soft drink bottle; let hang until completely cool (about 2-3 hours). Remove from pan, enjoy! Serves about 12.

Serve with strawberries and whipped cream or your own favorite topping!
