2- 10 oz. cans Ro-Tel diced tomatoes- 1 with habanero and 1 with green chile
1 pkg. fresh Cherry Tomatoes (~20 -30 tomatoes)
1 lg. Yellow Onion
2 tbsp. minced Garlic
1 tbsp. Capers (with a dash of the juice)
3 tbsp. Brown Sugar
1 tbsp. Salt and Pepper
1 tbsp. dried Mint
1/4 c. Lime Juice
1 bunch Cilantro (I separate the leaves from the stem but it’s up to the cook)

Directions:
Directions:
Place all ingredients into a blender leaving out the 1 can of diced tomatoes with green chile. After blending ingredients pour into medium mixing bowl and stir in last can of tomatoes. Refrigerate for a few hours before serving
