Butter Fondant Recipe

3 c. Sugar
1 c. Whipping Cream
½ c. Milk
2 tbsp. Butter
1 tbsp. Light Karo Syrup
½ tsp. Vanilla
Dash of Salt

Directions:
Mix sugar, cream and milk until dissolved in a saucepan over low heat. Bring to a boil, and add Karo and salt. Stir constantly, wetting down the sides of the pan with a pastry brush dipped in hot water to remove the buildup on the side of the pan. Cook to 232°. Pour onto buttered marble slab. Add butter and beat with a wooden spoon. Knead with hands until soft. Put in plastic bags and store in refrigerator.

If using to make chocolates, store for several weeks (it will get creamier the longer it sits). When ready to use, add flavorings and roll into balls, and put in fridge to harden, then dip in dipping chocolate and enjoy.

This is the recipe we use to make homemade chocolates. Flavorings we typically use are mint, orange, maple nut, rum, maraschino cherries. We liked to make the butter fondant at Thanksgiving when we were all together, to make chocolates in December. We recently renewed this tradition!
