2/3 c. Shortening
1 2/3 c. Sugar
3 Eggs
2/3 c. + 1 tbsp. Baking Cocoa
1 1/3 c. Cold Water
2 c. Flour
1/3 tsp. Baking Powder
1 ¼ tsp. Baking Soda
1 tsp. Salt
2 tsp. Vanilla
½-1 pt. Whipping Cream
2-3 tbsp. Powdered Sugar

Directions:
Directions:
Cream together shortening and sugar, until fluffy. Beat in the eggs.

In a separate bowl combine the water and 2/3 c. cocoa.

In a separate bowl sift together the flour, baking powder, salt and baking soda.

Stir in the water mixture alternately with the flour, to the creamed egg and shortening mixture. Add 1 tsp. vanilla last, and stir.

Pour into a greased cake pan, and bake at 350° for 25 minutes.

Prepare frosting by combining powdered sugar and 1 Tbsp. cocoa. Whip the cream until thickened. Fold the cream into the cocoa mixture, and add vanilla last.

We all liked this cake with the chocolate whipped cream topping the best. I would usually make this at Thanksgiving for the few people who didn’t like pie… but we all wanted some too!
