4 large eggs
1/2 cup evaporated milk
2 tsp Dijon mustard
1/2 tsp salt
1/4 tsp pepper
1/2 lb sliced bacon cut into 1 inch pieces
1 large leek(dark green section trimmed off, light green & white section quartered, sliced thin and washed thoroughly)
6 oz crumbled goat cheese

Directions:
Directions:
Heat 12 in skillet over med-high heat. Add bacon, fry until crisp. Drain bacon in small colander set over a bowl to catch drippings. Return 2 tbsp drippings to the skillet. Add leek; saute until tender, then scrape into colander along with the bacon. Mix all ingredients together & pour into a Pyrex pie plate. Bake at 400 until just set, about 20 min.
