2 Large Yellow Peppers
3 Tbls. Virgin Olive Oil
2 Shallots, Chopped
3 Garlic Cloves, Minced
1/2 c. Dry White Wine
1 1/2 Tbls. Lemon Juice
1/4 tsp. Dried Thyme
1/8 tsp. White Peppercorns
Salt & Pepper
4 Salmon Steaks 4-5 oz Each

Grill peppers on preheated broiler. Grill peppers until charred on all sides. Transfer to bowl. Cover and let stand until cool enough to handle. Peel and seed. Blend into puree. Meanwhile, heat oil in small saucepan over medium heat. Add shallots and garlic and cook 1 minute. Add wine, lemon juice, thyme and peppercorns. Cook until liquid is reduced by half. Strain liquid into blender with yellow pepper and 1/ tsp salt. Blend until smooth. Sprinkle steak with salt and ground pepper. Grill or broil 4-5 minutes per side.
