4 Small Trout, Cleaned
1 Tbls. Lemon Juice
2 Tbls. Sherry
Salt
1 Tbls. Oil
2 Tbls. Butter
1/4 c. Grated Onion
1 (4 oz) Chopped Pimento, Drained
1 c. Dry White Wine
2 tsp. Cornstarch
1/4 c. Chicken Broth
Black Olives
Lemon Wedges and Parsley

Directions:
Directions:
Place trout on oval heat proof platter, or long shallow baking dish. Sprinkle both sides with lemon juice, sherry, oil and salt. Place on rack in wok over simmering water. Steam 6-7 minutes, or until fish flakes easy. While fish streams heat butter in a small saucepan over low heat. Add onion and saute. Add chicken broth stir in cornstarch. Stir in pimento and wine until sauce thickens. Pour sauce over steamed fish. Garnish with olives, lemon and parsley.
