8 oz. pasta of choice
1/2 cup butter
1/2 cup all purpose flour
1 1/2 cups fajita chicken strips thawed and chopped
3 cups half and half
1/4 tsp salt
1 1/4 cup shredded parm. cheese
4 cups shredded mozzarella. cheese
1 cup shredded cheese
1/8 tsp nutmeg

* mix cheeses in ziplock bag

Preheat 375º/400º

-Cook pasta, drain and rinse with cool water, return to saucepan.
-Melt butter in medium saucepan over medium heat. Stir in flour; cook for 2 minutes, whisk constantly. Gradually whisk in half & half and salt.; simmer for 5 minutes, or until sauce starts to thicken, stirring frequently.
-Pour sauce over chicken and pasta. Toss well. Layer 1/2 of the pasta mixture in a 13x9x2 in. baking dish, coated with non-stick cooking spray. Top with 1/2 of the cheese mixture. Repeat layering with the remaining pasta, chicken and cheeses.
-Sprinkle with ground nutmeg.
-Bake uncovered for 30 minutes.
