1 C chopped onion
2 T butter
3 C cooked rice (1 cup uncooked)
1 10 oz pkg frozen chopped spinach, cooked
1/2 tsp. garlic powder
1/2 tsp. basil leaves
1/2 tsp. ground thyme
3 eggs, beaten
1/2 C grated Parmesan cheese

Directions:
Directions:
Cook onions in butter till tender. Add rice, spinach, and seasonings. Beat eggs and stir into rice mixture. Turn into a buttered 2 quart casserole. Sprinkle with Parmesan cheese. Bake in 375º oven for 20 minutes.
