1 tub ricotta cheese (2 lb.)
1 cup shredded mozzarella cheese
1 cup parsley, finely chopped
1/2 cup Romano or Parmesan cheese
2 large eggs
1/2 tsp. nutmeg
1/4 tsp. pepper
1 jar (26 oz.) marinara sauce
1/2 cup mozzarella cheese

Directions:

Preheat oven to 375º
cook pasta as directed. Mix filling ingredients in a large bowl. Drain pasta and rinse under cool water. Drain and spread on baking sheet. Pour marinara sauce into baking dish. Spoon 2 tbsp. filling into each shell. Arrange shells stuffing side up on sauce in a single layer. Cover with foil. Bake 30-35 minutes until sauce bubbles. Top with remaining 1/2 cup cheese. Bake uncovered 5 minutes to melt cheese.
