Makes 29 pints (with 1/2 bushel)

1/2 bushel medium cucumbers - sliced
6 large (or 10 medium) white onions, sliced
2 green peppers, chopped
1 head garlic

BRINE: Original (x 2.5)
1/3 (3/4) cup coarse-medium salt
5 (12.5) cups sugar
1 1/2 (4) tsp turmeric
1/1/2 (4) tsp celery seed
2 (5) tbsp mustard seed
3 (7.5) cups cider vinegar

For a 1/2 bushel of cucumbers multiply original brine recipe by 2.5.

Do not pare cucumbers; slice thin. Add onions, peppers and whole garlic cloves. Add salt; cover with cracked ice; mix thoroughly. Let stand 3 hours; drain thoroughly.

Combine remaining ingredients; pour over cucumber mixture. Heat just to a boil. Seal in hot, sterilized jars.
