1- 2 lb package frozen hashbrowns, partially thawed
1- 16 oz sour cream
1/2 c. onion, chopped
1/2 c. green pepper, chopped
2 c. Colby cheese, shredded
1 c. Monterrey jack, shredded
1 Tbsp. Instant Chicken Bouillon
1 jat pimento, drained

Preheat oven t 350 º. In large bowl, combine all except 1/2 c. Colby cheese. Turn into a buttered 9 x 13 pan. Bake 55 minutes. Top with remaining Colby cheese and bake 5 min. more. Let stand 5 min before serving.

I prefer to add a can of condensed cheddar soup to make it cheesier and not so dry. Also you can add either browned sausage or chopped ham to make it a breakfast side dish.
