12 oz. boneless chicken breasts, cut into bite size pieces
3/4 c. chopped onion
1 c. sour cream
1 Tbsp. butter
1 c. each Cheddar and Monterrey Jack cheese shredded
15 oz can tomato sauce
5 10" tortillas
2- 4 oz cans mild chili peppers, chopped
2 c. corn, drained
1 Tbsp. chili powder
1 tsp. cumin
1/2 c. Monterrey Jack cheese to top

Preheat oven to 350 º. Lightly grease a 2 qt. round casserole dish. In large skillet, over medium heat, saute onion and chicken in butter about 8 minutes.Stir in tomato sauce, peppers, chili powder and cumin. Simmer on low heat for 15 min. In small bowl, combine sour cream, cheddar and Monterrey jack cheeses.
Place 1 tortilla in dish and cover with 1/5th of chicken mixture, 1/2 c. corn and 1/4 sour cream mix. Repeat layers 3 times. On top of last tortilla, place remaining chicken mix and top with 1/2 c Monterrey Jack cheese. Bake for 35 min. or until light golden and bubbly.
