3/4 C. soft shortening (half butter)
1 C. sugar
2 eggs
1/2 tsp. vanilla extract
Sift together:
2-1/2 cups flour
1 tsp baking powder
1 tsp salt
Directions:
Directions:
In a large bowl, cream shortening and butter together until well blended. Stir in eggs and vanilla.
In a separate bowl, sift together flour, baking powder and salt.
Gradually combine flour mixture into shortening mixture, mixing well with each addition. Mix until well blended.
Form the dough into a ball and refrigerate dough for 1 hour to chill.
Using a floured rolling pin, roll dough out on a floured surface to desired thickness (~ 1/4 inch). Using cookie cutters, cut dough into desired shapes and transfer to ungreased cookie sheets. You can decorate with sugar sprinkles if desire, before baking or you can frost and decorate cookies after they have cooled.
Bake at 400º for 4-6 minutes.
