3/4 C orange juice
1/4 C soy sauce
1 tsp pressed garlic
1/2 tsp pepper
4 green onions, chopped
1 stalk celery, chopped
1 C cashews
4 chicken breasts, cut into 1" strips
1/3 C honey
1 T cornstarch
1 tsp ginger
2 T vegetable oil, divided
2 large carrots, chopped

Directions:
Directions:
Combine juice, honey, soy sauce cornstarch, & seasonings. In a skillet heat 1 T oil until it smokes. Stir fry vegetables or several minutes until onions become fragrant. Set aside & keep warm. In the same skillet heat another 1 T oil until it smokes & stir fry chicken strips until brown & tender. Add cooked vegetables, cashew, & sauce mixture. Continue cooking until sauce bubbles & thickens. Serve with rice.
