2 c dry elbow maccaroni, cooked al-dente
500 g extra old at least 5 year old white cheddar
1 lg sweet onion, diced
1 lg ripe tomato - sliced paper thin
fresh cracked pepper
chives, chopped
milk

Oven 350º
Grease deep clear glass baking dish with butter. Saute onion in a bit of butter until transluscent or lightly browned.
Make 3 layers of ingredients starting with a light layer of cheese over bottom of pan. Layers will be cheese, maccaroni, onion, cracked pepper, tomato, finish with cheese and chopped chives and cracked pepper. Pour milk over ingredients, ensure that milk does not come up over top layer.
Bake until golden brown - approximately 30 minutes. Do not cover. Serve hot

A oven proof clear bowl gives this recipe a lovely presentation at the table.
The key to success with this recipe is don't be stingy with the cheese.
