2 T butter
1/2 c white sugar
2 eggs, separated
3 T flour
1 3/4 c milk
1/4 c lemon juice (freshly squeezed)
3 tsp grated lemon peel
Confectioners sugar (for dusting)

Directions:
Directions:
Oven 350º
Beat butter and sugar until blended, beat in egg yolks. Blend in flour. Add milk, lemon juice and peel. Beat egg white until soft peaks form and fold into first mixture. Pour into 9 x 9 baking dish and place in hot water bath (1" water) and bake for40 - 45 minutes until golden and knife in centre comes out clean. Let stand 15 minutes before serving. Sprinkle lightly with confectioners sugar
