1 lb. of maple bacon (or regular bacon and add maple syrup right before done)
1 stick unsalted butter
2 3/4 c. all purpose flour
2 c. pure maple syrup
3 lg eggs
1 T. baking powder
1/4 t. salt
1 c. milk
1 t. vanilla extract

Directions:

cook bacon until crisp, crumble and set aside.

spray 2 9 inch round pans with nonstick cooking spray.
Beat butter until creamy, add eggs and mix until well combined. Add maple syrup and mix until well combined.
In separate bowl, sift together flour, baking powder
and salt. pour into butter mixture. add milk and vanilla extract.
mix until all ingredients are well combined.
stir in half of crumbled bacon.
divide batter between 2 pans. Bake 350º for 40 minutes or until a toothpick comes out clean.

cool cakes for 10 minutes, then remove cakes from pan and cool on rack.

ice cake and top with remaining bacon.

frost with Maple Buttercream Frosting (dessert section)
