4-41/2 cup cubed cooked potatoes (5 lbs equals 10 cups cubed)
1/4 cup margarine
1/4 cup flour
1/4 tsp dry mustard
2 cup milk
1/2 tsp salt
1/8 tsp pepper
1 tsp horseradish
1/4 cup grated Parmesan cheese
1/2 tsp paprika

Directions:
Directions:
Place potatoes in casserole. Melt margarine in saucepan. Stir in flour and mustard. Add milk all at once. Cook, stirring until smooth and bubbling. Remove from heat, add salt, pepper and horseradish. Pour over potatoes and stir gently to mix. Sprinkle with combined Parmesan cheese and paprika.

Bake in moderate oven at 350º about 30 minutes until heated thru. May be started in refrigerator over night before baking. Increase baking time about 15 minutes.
