Serves 5-6

1 med eggplant
2 cups canned tomatoes
1 green pepper
1 medium onion
3 tbsp butter
3 tbsp flour
1 1/2 tsp salt
1 tbsp brown sugar
Bread crumbs
Grated cheese

Directions:
Directions:
Peel and dice eggplant. Cook for 10 min in boiling water. Meanwhile chop tomatoes, onion and pepper. Melt butter and add flour, stirring. Add tomatoes, pepper, onion, salt and sugar. Cook 5 min.

Drain eggplant and place in greased 1 qt casserole. Top with vegetable mixture. Cover lightly with bread crumbs and grated cheese. Bake uncovered at 350º for 35 min.
