Makes 2 loaf pans or 1 angel food pan

3 eggs
1 cup oil
2 cup sugar
2 cup shredded zucchini
1 cup drained pineapple (crushed)
3 cup flour
2 tsp baking soda
1/4 tsp baking powder
1 tsp salt
1 tsp cinnamon
1 cup chopped nuts
1 cup shredded coconut

Directions:
Directions:
Mix eggs, oil, sugar, beat until thick. Add zucchini and pineapple. Sift flour, baking soda, baking powder, salt and cinnamon. Add sifted mixture into egg mixture. Add nuts and coconut.

Bake in greased and floured pans at 350º for 1 hour or till done.
