3 eggs
1 c. vegetable oil
2 c. sugar
3 tsp. vanilla
3 c. flour- all purpose
2 c. grated zuccini (or food processed)
1 tsp. salt
1 tsp. baking soda
3 tsp. cinnamon
1/4 tsp. baking powder
1/2 c. chopped pecans

Directions:
Directions:
Preheat oven to 325º.
Beat eggs, oil, sugar & vanilla together. Add flour, salt, baking soda, baking powder & cinnamon in another bowl. Then combine wet ingredients with the dry ingredients until mixed thoroughly. Beat well. Add zucchini & nuts. Pour mixture into greased & floured loaf pans. Bake for 1 hour or until done. If top of loaf springs back, it's done.
