Ingredients:  
6 eggs, 1 tbsp. olive oil, 1/4 c. chopped onion, 1/4 c. minced parsley, 2 c. tomatoes diced.

Directions:
Directions:
Saute onion and parsley in oil for about 10 minutes. Add tomatoes, salt and pepper and simmer for 1/2 hour. Bring to a boil and carefully drop in the eggs in at a time to poach. Sprinkle with fresh basil. Serve with Italian bread or toast for dipping in the sauce and egg.
