1 c. rice, 1 c. sugar, 6 eggs, 1 qt. milk, 2 tsp. vanilla, 1 c. Parmesan cheese, 1/4 tsp. nutmeg.

Directions:
Directions:
Heat oven to 325º. Cook rice in water until almost done. Drain well and pace in large mixing bowl. Mix all the ingredients together and pour into a greased baking dish. Bake for about one hour until top is nicely brown. Cut into squares and serve warm. (I made this with one c. of raisins instead of the Parmesan and it came out great for a dessert).

Aunt Clivia states that this is an old recipe from Carrara. Her mother, Aunt Enes and Aunt Lydia used to make this dish.
