1 lb Great Northern Beans
1/4 lb salt pork, cut in 1 inch pieces
1 tsp. salt
2 T brown sugar
1 T Worcestershire sauce 1/4 C molasses
1/4 C molasses
1 tsp. dry mustard
1 medium onion, diced
1 cup hot bean liquid

Directions:
Directions:
Wash beans. Don not soak. Cover with 8 cups of water and cook just till the skins curl. Drain, reserving liquid. Place in bean pot or casserole. Combine seasonings and onion with bean liquid and pour over beans. Press pieces of pork into top leaving only rind exposed. If necessary add more water to cover beans. Cover and bake in a slow oven (250º) for 8-10 hours. Uncover the last 30 minutes to allow beans to brown. If beans become dry, add water.
