2 egg whites
2 c shredded coconut
1/2 c coconut milk
8 oz of bittersweet chocolate, chopped

Directions:
Directions:
Oven 350º.
Whisk egg whites lightly and stir in coconut. Spray mini muffin tin with cooking spray and press a spoonful of coconut mixture into each cup, pressing it evenly along the bottom and sides of pan. Bake 12 - 15 minutes until golden. Cool
Heat coconut milk add chocolate and stir until melted. Pour into tart shells. Chill
