2 c. Brazil nuts finely ground, 1 c. sugar, 6 eggs separated, 1/4 tsp. salt, lemon rind grated or 1 tsp. vanilla.

Directions:
Mix nuts, sugar and salt. Beat yolks until foamy, then add sugar and nut mixture. Beat well. Beat whites until peaks form and fold into mixture. Add lemon or vanilla. Bake in 3 greased and floured 8 inch cake pans for 30 minutes at 325º. Or, use an 8 inch tube pan or springform pan and bake for 20 minutes. Then raise temperature to 375 for 10 minutes, then decrease heat to 325º for 25 to 30 minutes more. Top the cake with whipped cream, icing or butter cream frosting.
