1 diced onion
2 T olive oil
½ pound fresh spinach chopped
½ t salt
½ t pepper
1/3 cup feta cheese
3 T Drained chopped dried tomatoes in oil
¼ toasted pine nuts

1 4 lb beef or pork tenderloin, trim

Directions:
Directions:
Roast 425 for 50 minutes until 145 degree internal temp.

Trim Pork Loin Slice a pocket 2/3 through.

Saute onion til translucent, add spinach, salt/pepper until spinach silts. Remove from heat and add cheese, tomatoes.

Stuff and tie at 1” intervals. Place cut side up on roasting rack. Cover exposed stuffing with a strip of foil.
