1 lb. dry beans (cranberry or kidney beans) soaked overnight, salt pork finely chopped, 1 yellow onion chopped, 2 celery stalks chopped, 1 can diced tomatoes, 1/2 c. ditalini or other small pasta.

Directions:
Directions:
Drain beans and place in large pot with water to cover. Bring to a simmer and cook over low heat till almost done. In another pot, place slat pork, onion, celery and olive oil and cook until browned. When beans are almost cooked, add the pork mixture, tomatoes and finish cooking, You can add small pasta like ditalini and cook another 10 to 15 minutes till pasta is done.

Dad loved this dish. Mom may have acquired this recipe from another family member since she was not fond of beans.
