3 lb beef shank
1 lb boneless beef, cut in 1 inch pieces
2 quarts water
1 T salt
1/4 tsp. pepper
4 C shredded cabbage
2 C chopped onion
1 28 oz can tomatoes cut up
1/4 C lemon juice
1/4 C parsley flakes
3 T granulated sugar
1/2 tsp. garlic powder
1 tsp. paprika
1 bay leaf
1 16 oz can diced beets

Directions:
In large kettle place beef shank and cubed beef. Add water, salt, and pepper. Bring to boiling. Reduce heat; cover and simmer 2 hours or till meat is almost tender. Remove beef shanks. When meat is cool enough, trim from bones, and cut in serving portions. Return the to broth; discard bone. Add remaining ingredients except beets and sour cream to broth. Cover and simmer 1 hour more. Add undrained beets; heat through. Remove bay leaf. To serve, top each serving with sour cream.
