1 Package Shitake Mushrooms (or 2-3ozs dried)
1/2 Cup Madeira Wine
2 Cups Beef Stock
1 Cup Heavy Cream (1/2 Pint)
1/2 Stick Butter
2 or 3 Chopped Shallots
1/4 Cup Chopped Italian Parsley
Pinch of Thyme
Four & water blended together for thickening

Directions:
Directions:
Melt butter in a skillet and gently sauté the shallots and mushrooms until they are golden and tender.

Add the beef broth and wine and reduce to about one half. Add the cream, thyme and parsley.

Add flour and water mixture, if needed to thicken.
