Sticky Toffee Pudding Recipe

Pudding:
1 3/4 cups pitted, chopped dates
1 tsp baking soda
3/4 c boiling water
1/3 c butter
3/4 c white sugar
2 eggs, beaten
1 1/8 self-rising flour

Caramel Sauce:
3/4 c packed brown sugar
1/3 c butter
2/3 c cream
1 tsp vanilla extract

Directions:
Directions:
Pre-heat oven to 350º. Grease an 8" square baking dish.

In a small bowl combine the dates and baking soda. Pour enough boiling water over the dates to just cover them.

Cream butter with white sugar until light. Beat in the eggs and mix well to combine.

Add the flour and date mixture (including water) to the egg mixture and fold to combine. Pour the batter into the baking dish.

Bake for 30 to 40 minutes until a toothpick comes out clean. Let cool slightly and prepare the sauce.

To make Caramel Sauce: In a small saucepan combine the brown sugar, butter and cream. Cook over a medium heat and bring to a boil. Turn heat down and simmer for 5 minutes, stirring occasionally. Remove from heat and stir in vanilla. Pour the sauce over each individual serving of warm cake (can poke holes in cake to allow sauce to ooze into pudding) and top with whipped cream or vanilla ice cream.

This is not a 'wee Betty' recipe. Several years ago when we were home we were served Sticky Toffee and fell in love with it. After trying several recipes, this is one of the best I have ever tasted.
