4 frozen fish filets, 1 1/2 lbs. (I use salmon)
1 4 oz. package sun dried tomato butter
1 tsp. oregano, coarsely chopped
Juice of 1 lemon
8 oz. angel hair pasta
2 tbls. capers (I add more!)
1/2 c. red wine vinegar
1/2 tsp. kosher salt
1/4 tsp. pepper

Directions:
Preheat large saute pan on medium high for 2-3 minutes. Coat both sides of fish with cooking spray, then place in pan. Cook 4 minutes w/o turning.
Cook pasta following package instructions. Drain and return to pan. Cover to keep warm.
Turn fish and cover;cook 4 more minutes or until fish separates easily. Remove fish from pan, season w/ salt and pepper, then cover to keep warm.
Reduce heat to same saute pan to medium. Place vinegar, capers, lemon juice and oregano in pan. Cook and stir for 1-2 minutes or until liquid is reduced by half. Remove from heat. Whisk in one half of tomato butter until blended.
Stir in remaining half of tomato butter into pasta. Serve sauce over fish.
