1/3 C packed brown sugar
3/4 tsp. grated lemon peel
2 T butter or margarine, melted
1 8 3/4 oz can pineapple tidbits, drained
6 maraschino cherries, halved
1 1/4 C all purpose flour
3 T granulated sugar
2 1/4 tsp.. baking powder
1/8 tsp. salt
1 egg, beaten
3/4 C milk
2 T cooking oil

Combine brown sugar, lemon peel, and the melted butter. Divide mixture evenly amount 12 greased muffin cups. Arrange a few pineapple tidbits and a cherry half in bottom of each cup. In mixing bowl, stir together flour, granulated sugar, baking powder, and the salt; make well in center. Combine egg, milk, and oil. Add to dry ingredients. Stir till dry ingredients are moistened. Spoon into muffin cups. Bake in 400º oven 20 minutes or till done. Immediately invert muffins onto wire rack.
