whole or filets of either catfish or crappie
1 can pet milk
salt
cornmeal
2 medium paper sacks
1 match
cooking oil
iron pot
knife
paper towels
shallow dish to roll fish in
Wire skimmer
Potatoes cut up for French fries

Directions:
Directions:
Clean the fish, wash thoroughly, and pat dry with a paper towel.
Score the sides of the fish with a sharp knife. Set aside.
Pour pet milk in a shallow dish.
Pour cornmeal and salt in one paper sack. Set aside.
Roll the fish in the pet milk and put it in the paper sack. Gently shake to coat the fish. Set aside.
Heat the oil over a stove or other heat source. When you think the oil is hot enough, place a match in the oil. If the oil is hot enough to cook the fish, it will strike the match. Once this is done, remove the match.
Then, remove the coated fish from the sack and shake the excess batter off.
Carefully place the battered fish in the oil and cook until brown.
In another paper sack, place a folded paper towel.
Use a wire skimmer to scoop the fish out of the oil and place the cooked fish in the paper sack. Roll the top of the sack down to keep the fish hot until all the fish are cooked.
Place the cut up potatoes in the oil and cook until brown.

My great grandfather, R.E. Brown, used crappie instead of catfish and I heard he was a really good cook!
