1 box Uncle Ben's broccoli rice au gratin mix
2 1/4 cup hot water
1 tablespoon butter
2 cans chicken broth (to be all vegetarian you could use vegetable broth)
1 cup chopped fresh broccoli
1 cup shopped fresh carrots
1/2 a med. onion diced
1 clove minced garlic
1 tsp. Penzey's Mural of Flavor seasoning (if you don't have a Penzey's that's very sad for you but if you must you could use any seasoning blend that you really like)
1 cup fat free 1/2 and 1/2
1 cup shredded extra sharp cheddar cheese

1. Combine rice, contents of seasoning packet, hot water, and butter. Bring to a boil and reduce heat to a simmer.

2. Add in the chicken broth, broccoli, carrots, onion, garlic, and Mural of Flavor seasoning. Let simmer until rice and carrots are fork tender.

3. Add in the 1/2 and 1/2 and whisk in the cheese, stir and simmer until cheese is melted. If you want it thicker add a little cornstarch. If you like it thinner add more 1/2 and 1/2.

I got this recipe off the Uncle Ben's box probably 25 years ago. But I have to say, I don't really measure stuff I just dump it in. So I admit to kinda guessing on the amounts used in this recipe, so feel free to taste as you go and add more or less of whatever you need.
