1 1/2 C cornmeal
1/2 C all purpose flour
1 tsp. granulated sugar
2 large eggs, beaten
2 T whole kernel corn
1 large onion, chopped fine
1/2 Jalapeno fresh pepper chopped fine, seed and all
3-4 oz buttermilk

In bowl sift together all dry ingredients. Add eggs, corn, onion, and jalapeno pepper. Mix with buttermilk. Refrigerate overnight in covered container. When ready to serve heat deep oil to 350º, drop a tablespoon at a time into deep oil and fry 2-3 minutes or till golden brown. Drain on absorbent paper towels.
